Mexican Chefs Discover Slovakia: What Surprised Them About Slovak Cuisine? | Slovak Tour Ep. 1


If you want to truly discover a country, visiting its landmarks is not enough. You have to sit down at its table. That idea inspired Slovak Tour, a series in which our Mexican chefs – Brian Navarro, Hector Rosales and Roberto Romero – set out to explore Slovakia through its food. Not as tourists, but as chefs who believe that every dish tells the story of a country.

Their first stop was Sýpka u Ludvíka, a restaurant where Slovak cuisine is built on quality local ingredients, traditional recipes and respect for craftsmanship.

First impressions? Slovak cuisine exceeded their expectations.

During their visit, they tasted a selection of both traditional dishes and modern interpretations of Slovak classics. Every plate revealed a different side of Slovak gastronomy – from its respect for local ingredients to its focus on seasonality and careful preparation.

One of the biggest surprises was a modern take on the traditional potato pancake. It proved that a classic recipe can stay true to its roots while feeling fresh and contemporary.

As chefs, they especially appreciated that every dish had its own character and was prepared with great attention to detail.

Kapustnica surprised them. Fish soup reminded them of home.

One of the most memorable moments was tasting traditional Slovak soups.

Kapustnica, Slovakia's famous cabbage soup, was a completely new experience for our chefs. There is nothing quite like it in Mexican cuisine, so they were fascinated by its bold flavors and unique combination of ingredients.

On the other hand, the traditional fish soup brought back memories for Roberto. It reminded him of the shrimp soup his family prepares every New Year's celebration in Mexico.

Moments like these show that although Slovak and Mexican cuisine are very different, food often carries the same emotions and memories.

Poppy seeds? A Slovak tradition, a Mexican rarity.

Desserts brought another surprise.

In Slovakia, poppy seeds are a traditional ingredient found in many sweet recipes. For our chefs, however, they were something quite unusual, as poppy seeds are only rarely used in Mexican desserts.

Even such a simple ingredient became the starting point for an interesting conversation about how different cultures can use similar ingredients in completely different ways.

Great food is a universal language.

Throughout the visit, our chefs paid attention to much more than just the food. They were equally interested in the atmosphere of the restaurant, the professional service and the way each dish was presented to guests.

As chefs themselves, they know that a truly memorable dining experience is created by more than what happens in the kitchen. It is shaped by the people who prepare the food, serve it and turn every meal into an experience.

That is why their visit to Sýpka u Ludvíka was much more than a tasting of Slovak cuisine. It was an opportunity to better understand the country that has become their second home.

This is just the beginning.
